E.A.S. Naxos Graviera (stick)
One could say that the Graviera of E.A.S. Naxos (a.k.a. “stick”) is the “cousin” of Graviera Naxou P.D.O. of E.A.S. Naxos!
This cheese is produced just like Graviera Naxou P.D.O. and with the same milk proportions (80% min. cow milk, 20% max. goat and sheep milk and traditional rennet), while both have the same maturation time.
However, it has a different shape, specifically rectangular, from which it took its characteristic nickname (“stick”).
It is an ideal cheese for toast and saganaki.
Things you should know:
- E.A.S. Naxos distributes its Graviera (“stick”) in 3-kilos packages and in 200-gram packages (10 slices for toast)
- Fat in dry matter min. 40% by weight
- Moisture max 38% by weight
